These cheeses should be relatively widely available in the US and other countries. They have different grades, and you will get better quality if you avoid industrial brands but don’t stress. Buy what is available.
- Comté (hard, nutty-tasting yellow cow cheese from the Jura)--very versatile and goes with any wine.
- Brie (creamy cow cheese from east of Paris)--goes with white or red, depending on taste.
- Roquefort (salty blue sheep’s milk cheese from the Auvergne) marries perfectly with sweet wine like Sauternes or Barsac, and is ok with dry white wine.
